Beitzah 3:6

One may not set the price for an animal on yom tov at the outset (l’chatchilah) but one may do so before yom tov, then slaughter the animal and divvy it up on yom tov. Rabbi Yehuda said that one may weigh meat on yom tov against a utensil or a cleaver (but not against a weight); the Sages say that scales may not be used at all on yom tov.

Beitzah 3:7

One may not sharpen a knife (on a grindstone) on yom tov but one may draw one knife across another (which is different from the usual weekday manner). One may not instruct a butcher to weigh for him a certain value of meat but the butcher may slaughter the animal and people can take the desired amount.
